Easy Recipe: Citrus Grilled Vegetables

  • 6-8 large mushrooms
  • 2 small zucchinis
  • 1 red pepper
  • 1 green pepper
  • For marinade:
  • 1 Cup olive oil
  • ¼ Cup lemon juice
  • 1 Tablespoon dried cilantro
  • 2 teaspoons minced garlic
  • ¼ teaspoon salt
  1. Slice mushrooms in half
  2. Slice zucchini into thick slices
  3. Remove seeds from peppers and slice the peppers into large strips
  4. Mix ingredients for the marinade in a large bowl.
  5. Toss the vegetables into the marinade and give a good stir. Make sure the vegetables are good and coated with the marinade.
  6. Allow the vegetables to sit in the marinade for about 5 minutes.
  7. Place vegetables into grilling pan and place on the grill.
  8. Allow the vegetables to grill for about 5-10 minutes.
  9. Watch carefully and stir often until desired "doneness" is achieved.
