Easy Recipe: Citrus Grilled Vegetables

- 6-8 large mushrooms
- 2 small zucchinis
- 1 red pepper
- 1 green pepper
- For marinade:
- 1 Cup olive oil
- ¼ Cup lemon juice
- 1 Tablespoon dried cilantro
- 2 teaspoons minced garlic
- ¼ teaspoon salt
- Slice mushrooms in half
- Slice zucchini into thick slices
- Remove seeds from peppers and slice the peppers into large strips
- Mix ingredients for the marinade in a large bowl.
- Toss the vegetables into the marinade and give a good stir. Make sure the vegetables are good and coated with the marinade.
- Allow the vegetables to sit in the marinade for about 5 minutes.
- Place vegetables into grilling pan and place on the grill.
- Allow the vegetables to grill for about 5-10 minutes.
- Watch carefully and stir often until desired "doneness" is achieved.
