Cinnamon Spelt Pancakes – Juggling Real Food and Real Life

Time to turn back the curtain a bit and take a look at what a Real Food family does for dinner when that dinner comes after a weekend where the usual shopping doesn’t happen.  My former self certainly would have said, “Nothing in the house to eat, so where do you want to go?”  I just can’t do that anymore.  It doesn’t taste good to me anymore and all I can think about is how awful the ingredients are.  I prefer to feed my family food that won’t slow them down.  We are all too busy to get sick with bellyaches or even headaches.  We all feel a lot better when we stick to our Real Food diet.

 


Now back to dinner…………It’s Girl Scout night and I work so dinner can’t take too long to make and the cupboards are bare.  I often turn to breakfast recipes when I’m in this situation.  My favorite pancake recipe requires bananas to sweeten it.  Of course, I’m out of bananas.  They don’t last long around here.  Then, a light bulb went off.  I have spelt flour that I’ve been wanting to try.  I could make pancakes with spelt flour.  Quick stop at the butcher shop for some bacon and we have a dinner that will even make the carnivores in the family happy.

Have you ever used Spelt flour?  Arrowhead Mills makes an organic spelt flour.  The package says it is “an ancient cousin to modern wheat.”  They go on to say, “It was one of the first grains to be grown by early farmers.”  It has a slight nutty flavor that I find very exciting.  I find it a bit lighter in texture than whole wheat flour.  That makes it perfect for baked goods and pancakes.

Here is the Cinnamon Spelt Pancake recipe that I used.  We were all over the place, so we ended up eating in shifts.  I made 2 batches and it was easy enough that cooking at 9:30PM really wasn’t that bad.

 

Cinnamon Spelt Pancakes

 

Cinnamon Spelt Pancakes


Ingredients:


1 1/2 Cup Arrowhead Mills Organic Spelt Flour
1 Cup Milk
1 tsp Baking Powder
1 Egg + 1 extra Egg white
1 1/2 Tbsp Cinnamon
1 tsp Vanilla
100% Real Maple Syrup (for serving)

Directions:


Mix all ingredients together (except the maple syrup).  Heat large frying pan over medium high heat.  Coat pan with melted butter to prevent sticking.  Spoon out batter into skillet and flip pancake when bubbles start to form and edges start to look dry.

These pancakes were so good that I will have to make these a regular recipe for us.  Maybe, just maybe…………..I will make them for breakfast sometime.

      Smelt flour! LOL! You don't know how many times I had to go back and double-check that I was spelling spelt correctly. I didn't want to mess up that word. Smelt pancakes wouldn't be good no matter how much cinnamon I put in them.

      I usually use whole wheat flour for my pancakes. They are really good. The spelt flour gave it a slighly more cake-like texture which I enjoyed. Give it a try sometime.
