Pancake Day: Try a New Pancake Recipe Today

Tuesday is one of my favorite holidays.  It’s Pancake Day.  How do you like your pancakes?  I like all sorts of different pancake recipes.  I’m especially fond of recipes that include cinnamon and recipes that include fruit.

We have a busy family schedule and I’ve found that breakfast for dinner is one of the quickest meals I can prepare.  The kids all love it and gobble it down without any complaints.  I love the peace and happiness that comes with breakfast for dinner.
 
Pancakes also work really well in the kids’ lunch boxes.  I like to make a big batch over the weekend and then pack them one day during the week in their lunch box.  I pack a separate container with the syrup so they don’t get soggy.  I also like to include fruit and a hard boiled egg.  Breakfast for lunch is also a big hit.
And……….if you want to eat pancakes for breakfast I suppose that is OK too.  Who doesn’t love that sweet goodness to start out their day?
OK……..time to celebrate.  Let’s try some new recipes.
These Cinnamon Spelt Pancakes are really easy to make.  Made with spelt flour they have a bit of a nutty taste which is a perfect match with cinnamon.  They are quite satisfying.  You may not have tried spelt flour before, but it can easily be found at most regular grocery stores.
Cinnamon Pear Oat Pancakes from Strength and Sunshine are gluten free and vegan.  They are sweetened with pears and seasoned with cinnamon which makes them extra special.
Grandma Hinz’s Apple Pancakes from The Life Jolie is a special family recipe.  Jessy says that there is a little technique involved in making them, but they are so worth the effort.
