Ahhh… fall! The air is a little crisper, the leaves are putting on their most colorful outfits, and suddenly I find myself reaching for cozy sweaters and my favorite fall mug filled with pumpkin spice coffee. There’s just something about this season that makes me want to slow down and savor the little moments — like breakfast around the table with my family on a Sunday morning.


If your house is anything like mine, weekday mornings are a blur of backpacks, lunchboxes, and “where are my shoes?!” shouts from down the hall. That’s why I love Sunday mornings so much. It’s the one morning a week where we can take things a little slower, sleep in (just a little), and enjoy a real breakfast together. And this time of year, that breakfast has to include pumpkin spice waffles.

These waffles are everything fall should be — warm, cozy, a little sweet, and full of that spiced pumpkin flavor we all look forward to the moment September hits. I love how the smell of cinnamon, nutmeg, and cloves fills the kitchen as the waffles cook. It’s like a little autumn hug for your senses.

What I really love most, though, is the way these waffles bring everyone to the table. The kids wander in with messy hair and sleepy smiles, we pour the syrup, pass around the butter, and laugh about the week that just passed. There’s something magical about starting a Sunday morning this way — no rush, no screens, just us and a stack of warm pumpkin spice waffles.

I like to serve ours with warm real maple syrup and pair them with fresh fruit and a side of crispy bacon for some protein. As easy as that, you’ve got a breakfast that feels like a celebration of the season.

So, this weekend, grab your favorite mug, put on your coziest socks, and gather your people around the table. These pumpkin spice waffles are more than just breakfast — they’re a moment to slow down, connect, and make memories together.

Cozy up to the flavors of fall with these light and fluffy Pumpkin Spice Waffles! Made with real pumpkin and just the right blend of cinnamon, nutmeg, and cloves, they’re the perfect weekend breakfast for the whole family. Top them with melting butter, drizzle with warm maple syrup, and enjoy a slow, cozy Sunday morning together.

  • Yield: 7-8 thick waffles

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/4 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • 1 1/2 cups buttermilk (can substitute your favorite milk)
  • 4 tablespoons melted butter
  • 2 eggs (beaten)
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla
  • 2 tablespoons of pure maple syrup – You will want additional for serving.

Instructions

1. Preheat waffle iron.

2. In a large bowl, mix together all of the dry ingredients – flour baking soda, baking powder, salt, and pumpkin pie spice

3. In a separate bowl or 4 cup liquid measuring cup, mix together the buttermilk, eggs, milk, melted butter, pumpkin puree, maple syrup and vanilla.

4. Pour the wet mixture into the dry mixture. Mix well until all combined. You will want a heavy wooden spoon to stir. The batter will be thick.

5.  Ladle batter into waffle maker and cook according to waffle maker directions.

6. Serve warm with real maple syrup.

Notes

We recommend organic ingredient when available.
