It is often said that “breakfast is the most important meal of the day.” Then why is it that so many of us skip it each day? I certainly don’t have all of the answers, but I bet for a lot you out there, the reason is simply that breakfast is in the morning. Say what? Think about it….we are sleepy, our kids are demanding things from us, and we haven’t even had our morning cup of coffee. It’s just easier to deal with everything else and skip over breakfast. It really comes down to the same thing we always do. Take care of everyone else instead of taking care of ourselves. Raise your hand if that is something you do.
Ok…….a bunch of you are still with me so I must be on the right track. One of the things that I like to do to feed my family while making things easier for me is to make a big batch of oatmeal. There is such a wonderful variety of ways to eat oats and since they are whole grains they pack a lot of nutrition into my morning. Make a batch in the crockpot over night, make a bunch of oatmeal muffins and freeze them, or boil a pot of water and cook oats while you are getting ready in the morning. It really is easy to make a healthy breakfast your whole family will love and still leave time for you to eat as well.
If you are looking for a delicious way to eat healthy in the morning, oats are the answer. They are budget, time, and kid friendly. The baked oatmeal muffins are a healthy grab-n-go breakfast. Packed with nutrition, oats stay nice and warm when packed in a thermos and are perfect for school or work. Oats really fill up tummies and keep you going strong all morning even when there is no time to eat at home.
My kids are easily bored when I serve the same meal over and over so I have collected quite a few different oat recipes. I will continue to share them here as I add them.
