I’m back with another delicious recipe as we celebrate Cherry Week here at Juggling Real Food and Real Life. I am celebrating cherry season with a week of brand new recipes featuring Skylar-Rae cherries thanks to my partnership with Stemilt. With cherries this sweet, it is easy to create amazing recipes that your family is sure to love. Today, I am sharing my recipe for a Cherry Compote.

Just a few years ago, I had never made baked oatmeal. Then I gave the blueberry baked oatmeal recipe a try and I’ve been hooked ever since. I happily toss ingredients into my mixing bowl and make baked oatmeal on a regular basis. I really love to make baked oatmeal in the muffin tins because it makes a nice portion size that can be eaten at home for a relaxing breakfast heated up in a bowl with warm milk poured over it. It is also completely portable if I have a morning where I need to run out of the house tossing breakfast at the kids.
The pumpkin pie spices in this recipe really punch up the flavor and go perfectly with the sweetness of the cherries. In fact, this recipe is so delicious and elegant looking that it can easily be served as a dessert with a scoop of vanilla bean ice cream. Whether you serve this Sweet Cherry Baked Oatmeal for breakfast or as a dessert, your family is sure to love it.
Sweet Cherry Baked Oatmeal
- 2 Cups Rolled Oats
- ½ Cup Shredded Coconut
- 2 Bananas (Smashed)
- 2 Tablespoons Coconut Oil (Melted)
- 2 Tablespoons Real Maple Syrup
- 2 Tablespoons Milk
- ¾ Cup Cherries (Pitted and Quartered)
- ½ Teaspoon Pumpkin Pie Spice
- Preheat oven to 350*
- Mix all dry ingredients.
- In separate bowl mix wet ingredients.
- Add wet ingredients to dry ingredients.
- Carefully fold cherries into mixture.
- Using a large spoon or scoop, place mixture into a greased muffin tin.
- Lightly pack the mixture into the muffin tin so it holds together better.
- Bake for 20 – 25 minutes.
- Baked oatmeal will be slightly brown on top.
