When you’re juggling work, kids, homework, and all the other little things that fill your days, dinner can feel like just one more thing on a long to-do list. The good news? Dinner doesn’t have to be complicated to be delicious and satisfying. Quesadillas are one of my favorite go-to meals for busy nights — they’re quick, affordable, and everyone in the family loves them! They are pretty much just “fancy” grilled cheese sandwiches according to my kids.

With just a few simple ingredients — like whole wheat wraps, shredded chicken, and cheese — you can pull together a wholesome dinner in minutes. Plus, you can customize them with whatever you have on hand, making quesadillas one of the most flexible and budget-friendly meals out there.

Real Mom Tip
Make a big batch of shredded chicken at the beginning of the week and store it in the fridge. You’ll have a head start for not only quesadillas, but also salads, wraps, and pasta dishes. If you would like seasoned chicken toss in a bit of our homemade taco seasoning. One of our favorite add-ins for the adults are the diced tomatoes with green chilies. They can be found at Aldi.
